Hey guys, I just wanted to share a Sugar-Free Angel Food Cake recipe that I found. It tastes great, and only has 56 cals a serving! Can’t beat that – add some Fat Free Cool Whip and you’ve got a delicious, and nutritious desert! Just so you know, I got this from sparkpeople.com, I’m not trying to take credit here! Now for the recipe. Here you go:

You will need:

    1 cup sifted cake flour
    1-1/2 cups Splenda
    1/2 tsp salt
    12 egg whites
    1 tbsp water
    1 tsp vanilla extract
    1 tsp cream of tartar
Preheat oven to 350 degrees

Sift flour, salt, cream of tartar and splenda together.

In a separate bowl, beat egg whites, water, and vanilla until soft peaks form.

Gently fold dry ingredients into whipped egg whites. Fold until just incorporated.

Carefully pour batter into an UN-greased 10 inch tube pan.

Bake 350 degrees for 35 – 40 minutes.

Makes 12 servings

    I tried this recipe as published (and repeated here). You really want to beat the cream of tartar in with the eggs and not just stir it in with the dry ingredients. As written, the recipe results in a cake with the consistency of an English muffin.
